Look for

Character: Citrusy, Hoppy, Clean.

The citrus character should come more clearly from the Cascade this time, with the more neutral US 05 contributing less flavour of its own.

About this batch

Batch 02 keeps the same basic Cascade pale ale as Batch 01, but changes three things: more Cascade, US 05 instead of Voss, and 200 g Carahell replacing the same amount of Pale Ale malt.

This is the first variation on Batch 01.

The total grain bill stays at 2.0 kg, but 200 g of Pale Ale malt is replaced with Carahell. Cascade increases from 18 g to 32 g, and the yeast changes from LalBrew Voss to US 05.

Brew log

Mash

About 10 L of mash water at a target of 67°C. Actual temperature was about 66°C for the first 30–40 minutes.

  • BIAB, stirred roughly every 5 minutes.
  • About 60 minutes of main mash plus approximately 10 extra minutes.
Rinse

About 4 L of water at roughly 75°C. The grain bag was dunked and rinsed for approximately 5–10 minutes.

Boil

A 60-minute steady rolling boil at around 1600 W. It took approximately 30 minutes to reach the boil after rinsing.

Cool

The final Cascade addition went in after flameout at approximately 70°C rather than the originally intended 80°C.

Ferment

US-05 was pitched at 6 g. Intended fermentation temperature is approximately 20–22°C.

Not yet packaged.

Notes

  • Post-boil volume was just under/about 8 L before dilution; the concentrated wort measured approximately 1.049–1.050.
  • The recorded batch OG is 1.043 after dilution.
  • Protafloc, 0.25 g, was accidentally added after flameout at approximately 70°C. It did not appear to dissolve particularly well.
  • No additional Protafloc, Clarity Ferm, or dry hop was used.
